Vegetarian Ham (Mock Ham)

Using Chinese yam as the main ingredient, layered steaming and seasoning produce a vegetarian ham with a realistic color and shape, and a sweet, tender texture.

Vegetarian Ham (Mock Ham)

Ingredients

Yam (peeled, steamed, and mashed) 400 g
Egg whites 50 g
Sand ginger powder (Amomum villosum) 25 g
Jianqu juice (fermented herbal mixture) 20 g
Light caramel color 15 g
Fine salt 4 g
Sesame oil 4 g
MSG (monosodium glutamate) 1 g
White sugar 20 g

Prepare the Yam Mixture

Peel the yam and steam it in a steamer until fully cooked. Mash it into a puree and place it in a plate together with wet starch. Add the egg whites, fine salt, sesame oil, MSG, and white sugar, then stir well to combine into the yam mixture.

Make the 'Skin' Layer

Take 1/10 of the yam mixture, add the light caramel color, and mix evenly. Spread the mixture into an oiled metal tin, flatten it, and steam until firm. Remove from the steamer—this forms the 'skin' layer.

Make the 'Fat' Layer

Spread 3/10 of the yam mixture evenly over the 'skin' layer, flatten it, and steam for 10 minutes. Remove from the steamer—this is the 'fat' layer.

Assemble and Steam

Add the sand ginger powder and jianqu juice to the remaining yam mixture, stir in sesame oil, and spread the mixture evenly over the 'fat' layer. Return to the steamer and steam for another 35 minutes. Let cool, brush the surface with sesame oil, slice, and serve.
