Ingredients

Sweet corn kernels 1 cup
Cooked Chinese sausage 1 link, sliced
Cooked barley (or job's tears) 1/2 cup
Green peas 1/2 cup
Carrot 1/2 cup, diced
Dried chili peppers 2, chopped
Garlic 2 cloves, minced
Ginger 1 tsp, minced
Salt to taste
White pepper 1 pinch

Blanch the Vegetables

Bring a pot of salted water to a boil. Add the green peas first and cook for a minute. Toss in the diced carrots and corn kernels, and blanch everything together for another 1-2 minutes until just tender. Drain well and set aside.

Heat a splash of oil in a wok or large skillet over medium-high heat. Add the chopped chilies, minced ginger, and garlic. Stir-fry quickly until fragrant, taking care not to burn the garlic.

Add the blanched vegetables, sliced sausage, and cooked barley to the wok. Turn the heat to high and stir-fry vigorously for 2-3 minutes to combine the flavors and heat everything through. Season with salt and a pinch of white pepper. Serve hot.
