Wensi Tofu

A traditional famous dish from Jiangsu, this soup features tofu cut into fine strips, simmered with shredded bamboo shoots, shredded shiitake mushrooms, and other ingredients. The tofu is delicately tender, and the broth is rich and savory.

Wensi Tofu

Ingredients

Tofu (cut into shreds, blanched briefly in boiling water) to taste
Clear chicken broth to taste
Bamboo shoot shreds to taste
Dried mushroom shreds to taste
Salt to taste
MSG to taste
Ham shreds to taste
Vegetable shreds to taste
Chicken oil (drizzled over the finished dish) to taste
Additional clear broth to taste

Instructions

Prepare tofu

Cut tofu into shreds, blanch briefly in boiling water to remove the beany odor, then drain into separate shreds.

Simmer soup

Add clear chicken broth and additional clear broth to a wok, then add tofu shreds, bamboo shoot shreds, and dried mushroom shreds. Bring to a boil, then skim off any surface foam.

Season

Add salt, MSG, ham shreds, and vegetable shreds, and simmer briefly.

Serve

Pour the soup into a serving bowl, drizzle with chicken oil, and serve.
