West Lake Water Shield Soup

Ingredients

Fresh West Lake water shield (washed; if bottled, drain the liquid and rinse) 150 g
Cooked chicken breast (cut into strips about 6 cm long) 50 g
Cooked lean ham (cut into strips about 6 cm long) 25 g
Clear broth 350 g
Refined salt 2.5 g
MSG 2.5 g
Cooked chicken fat 10 g

Instructions

Step 1

Wash the water shield (if using bottled water shield, pour it out, discard the liquid, rinse thoroughly with water, and set aside). Cut the chicken and ham into strips about 6 cm long.

Add 500 g of water to a pot and bring to a rolling boil over high heat. Blanch the water shield briefly, then lift it out with a slotted spoon, drain off the water, place it in a soup bowl, and arrange the chicken and ham strips around it.

Pour the clear broth into a pot, add the refined salt and MSG, bring to a boil, then slowly pour it into the water shield soup bowl. Drizzle the cooked chicken fat on top to finish.
