White Chocolate Brownies
A white chocolate variation of traditional brownies, with a soft, sweet bite.
Ingredients
white chocolate (coarsely chopped)
150 g
unsalted butter
125 g
caster sugar
150 g
eggs
2
vanilla extract
1.5 tsp
plain flour
200 g
salt
a pinch
pecans (shelled and chopped)
120 g
Instructions
1
Melt the chocolate and butter
Preheat the oven to 170°C (325°F) Gas 3. Place the chocolate and butter in a bain-marie over low heat and melt until smooth, then remove from heat.
2
Add the sugar
Add the caster sugar and stir until thoroughly combined.
3
Add the eggs and vanilla extract
Add the eggs and vanilla extract, stirring quickly to prevent the eggs from cooking through. Don't worry if the mixture begins to split.
4
Add the flour, salt and nuts
Add the flour, salt and pecans, and stir until fully combined with the nuts evenly distributed.
5
Bake
Spoon the mixture into a 33×23×5 cm baking tin lined with baking paper and transfer to the preheated oven. Bake for about 35-40 minutes until the surface is golden and the centre is still soft. Remove and allow to cool completely.
