White Chocolate Lime Mousse
A simple yet delightful mousse that balances the smooth richness of white chocolate with the fresh, tangy brightness of lime.
Ingredients
Instructions
Step 1
Place the gelatin powder in a bowl, add the water, and let it bloom for about 5 minutes. Heat over a bain-marie until the gelatin fully dissolves.
Step 2
Carefully melt the chocolate (see p. 33). Whip the cream to soft peaks. Stir 1 tbsp of the cream into the chocolate, then add the gelatin, lime juice, and grated zest, and fold in the remaining cream.
Step 3
Whisk the egg whites with the salt to soft peaks, add the sugar, and continue whisking for at least 30 seconds. Fold a large spoonful of the whites into the chocolate to lighten, then fold in the remaining whites.
Step 4
Leave the mixture in the bowl, or spoon it into 6 small ramekins and chill for 4–6 hours. To serve, unmold the mousse onto ceramic ramekins, or spoon it from the large bowl into hazelnut chocolate baskets (see p. 89). Garnish with a few curls of julienned lime zest.
