White Chocolate Truffles
A soft-centered white chocolate ball made with white chocolate, butter, and cream, coated in cocoa powder.
Ingredients
White chocolate (broken into pieces)
180g (6 oz)
Unsalted butter (cut into cubes)
75g (2.5 oz)
Double cream
3 tbsp
Salt
1 pinch
Orange liqueur
1/2 tsp
Sifted cocoa powder (for coating)
2 tbsp
Instructions
1
Step 1
Melt the chocolate, butter, cream, and salt together (see page 34). Remove from heat and set aside to cool. Once the chocolate mixture has cooled, add the liqueur to flavor. Cover and refrigerate for about 2 hours, until firm.
2
Step 2
Scoop out marble-sized pieces of the chocolate mixture and roll into balls between your palms. If the mixture becomes too soft to roll, return it to the refrigerator for a while.
3
Step 3
Spread the cocoa powder evenly on parchment paper, and roll the chocolate balls through it to coat them evenly.
