Whole Grain Bread Rolls
Whole grain bread rolls made with whole wheat flour and bran.
Ingredients
milk
2 tbsp
honey
2 tbsp
syrup
2.5 tbsp
water
1 cup+2 tbsp
lard
1/4 cup
dry yeast
1 packet
whole wheat flour (stone-ground whole wheat flour)
1.75 cup
flour
2-2.25 cup
salt
1.5 tsp
egg (beaten)

bran flakes
to taste
Instructions

Heating the liquids
Heat the milk, honey, syrup, water, and lard, stirring until the lard melts. Cool to 105-110°F, add the yeast, and stir to dissolve.

Mixing the dough
Add both flours, salt, and egg. Using an electric mixer on low speed, beat until the ingredients are well combined. Let the dough rest in the mixing bowl for 30 minutes (or until doubled in volume).

Shaping
Turn out the dough and shape into bread rolls or small round buns. Gently press bran flakes onto the tops.

Second rise
Let rise for 30 minutes (or until doubled in volume).

Baking
Bake at 400°F for 15-20 minutes.
