Whole wheat bread with a crisp crust and rich wheat aroma, ideal for serving with garlic butter.

Prepare the yeast liquid
Microwave the milk briefly beforehand, about 15 seconds on low power, until it feels warm to the touch. Stir in the brown sugar until dissolved, then add the dry yeast and stir. Let it sit for a while.
Knead the dough
Use a bread machine. Place the salt at the very bottom, then add in order the beaten egg, whole wheat flour, bread flour, and butter cut into small pieces. Pour in the milk mixture. Select the dough cycle. If you do not have a bread machine, knead all of the ingredients except the butter into a rough dough, then slowly work in the butter, continuously throwing and kneading the dough for at least 20 minutes.
First fermentation
Grease a bowl, place the dough in it, cover with plastic wrap, put it in a 30°C oven along with a cup of hot water. When the dough has doubled in size, and a finger dipped in dry flour poked into the center does not spring back and the surrounding area does not collapse, it is ready.
Shaping and second fermentation
Remove the dough, deflate it by pressing, roll it into a ball, cover with plastic wrap and let rest for 10-15 minutes. Shape into your desired form, then place in a 40°C oven with a cup of hot water beside it until a finger press does not spring back. Preheat the oven to 200°C, place the dough on the lower or middle-lower rack, and bake for 35 minutes.
