Story

This dish brings out the natural sweetness of the clams using a splash of wine. It is fast, flavorful, and perfect for a quick appetizer or main course.

Ingredients

Fresh clams 500g
Cooking oil 1 tbsp
White wine 50ml
Ginger 1 slice, minced
Garlic 2 cloves, minced
Scallions 1 stalk, chopped
Dried red chili 1, broken into pieces
Salt to taste
White pepper a pinch

Clean the Shellfish

Scrub the clams thoroughly under running water to remove any grit. Drain well and set aside.

Sear the Clams

Heat the oil in a wok or large pan over high heat. Add the clams and stir-fry vigorously until they just begin to open their shells.

Add Aromatics and Wine

Pour in the white wine and toss the clams. Add the minced ginger, garlic, chopped scallions, and dried red chili pieces. Season with salt and white pepper.

Finish Cooking

Continue stir-frying until most of the clams have opened wide and the sauce is slightly reduced. Discard any clams that refuse to open. Serve immediately.
