Wine-Steamed Whole Chicken Soup
A traditional Jiangsu soup made with a whole hen steamed with Hua Diao (Shaoxing) wine. It has a silvery-white color, a clear broth, and a fragrant flavor.

live hen (main, defeathered after slaughter, gutted, claws removed, split along the back)

Hua Diao wine (seasoning)

scallion (seasoning)
15 g
ginger (seasoning)

MSG (seasoning)

salt (seasoning, original text says 'salt grams', amount missing)

Preparing the chicken
Slaughter the live hen, remove the feathers, open the cavity and remove the innards, chop off the claws, then split along the back. Blanch in boiling water to wash away blood and impurities.

Steaming
Place the chicken with the legs pointing upward and the belly facing up in a soup tureen. Add the Hua Diao wine, scallion, ginger, MSG, salt, and an appropriate amount of clear water. Steam over boiling water until the chicken is very tender, then remove and discard the scallion and ginger. Serve.
