Winter Melon Stewed with Pork Ribs
Classic Zhejiang cuisine, featuring tender, silky-smooth winter melon with a fresh, perfectly balanced savory and salty flavor.

Pork ribs (chopped into small pieces, rinsed and blanched)

Winter melon (peeled and cut into chunks)

Ginger (crushed)

Step 1
Chop the pork ribs into small pieces, rinse well and drain; peel the winter melon and cut into appropriate chunks; crush the ginger.

Place the pork ribs in a pot of boiling water and blanch for 5 minutes, then remove and rinse with clean water.

Add the pork ribs, ginger, star anise, and an appropriate amount of clean water to the pot. Bring to a boil over high heat, then reduce to low heat and simmer for about 60 minutes. Add the winter melon and continue simmering for about 20 minutes. Remove the ginger and star anise, then season with salt, white pepper, and MSG before serving.
