Winter Melon Swallow

A traditional classic of Sichuan clear-soup banquet cuisine, made by shredding winter melon to resemble bird's nest and steaming it with shredded ham.

Winter Melon Swallow

Ingredients

peeled winter melon 200g
MSG 1g
cooked lean ham (cut into fine shreds) 30g
fine dry starch 500g
Sichuan salt 2g
clear broth 1000g

Instructions

Step 1

Cut the winter melon into thin slices, then cut into fine silver needle-shaped shreds 10 cm long, coat with dry fine starch. Cut the ham into fine shreds.

Step 2

Bring water to a rolling boil in a wok, add the winter melon shreds and blanch until they turn bright white, then remove and rinse in cold boiled water to cool.

Remove, arrange neatly, place in a soup bowl, add Sichuan salt, ham shreds, clear broth, and MSG. Steam in a steamer until the winter melon shreds are fully flavored and cooked through.
