Wood Ear Mushroom and Tomato Soup
A Zhejiang home-style soup simmered with wood ear mushrooms, enoki mushrooms, and tomatoes. It features a light, fresh flavor and is highly nutritious.

Wood ear mushrooms (soak in clean water for about 1 hour, rinse, cut into small pieces)

Enoki mushrooms (soak in clean water for about 1 hour, rinse, trim the hard ends, soak in hot water for 5 minutes, drain excess water)

Soak Ingredients
Soak wood ear mushrooms and enoki mushrooms in clean water for about 1 hour, then rinse.

Prepare Ingredients
Cut wood ear mushrooms into small pieces, trim the hard ends of enoki mushrooms, soak in hot water for 5 minutes, then drain excess water.

Prepare Tomatoes
Rinse tomatoes, cut into pieces and remove seeds.

Cook Soup
Heat the oil, lightly stir-fry the tomatoes, add clear chicken broth and water, then add seasonings (salt, sugar, black pepper). Add wood ear mushrooms and enoki mushrooms, bring to a boil and simmer for a few minutes, then turn off the heat.

Add eggs and stir to combine, then serve.
