Wufu Drunken Chicken
A traditional specialty of Wufu Town, Zhejiang. The chicken is poached and then steeped in yellow wine, producing tender meat with a rich, fragrant aroma.
Ingredients
Tender plump chicken (slaughtered, defeathered, gutted, and rinsed)
1000 g
Shaoxing yellow wine
500 g
Fine salt (thinly coat inside and outside of the chicken)

Scallion knot

Ginger slices

Poach the chicken
Bring half a pot of water to a boil. Add the scallion knot and ginger slices, then place the chicken in the pot and poach until a chopstick can pierce through the meat. Remove the chicken.

Marinate
Thinly coat the inside and outside of the chicken with salt. Once the chicken has cooled, chop it into pieces and arrange them in a clean ceramic pot. Pour in the yellow wine until the chicken pieces are just submerged. Cover the pot tightly and marinate for two days.
