Xu Pie (Indian Flatbread)
A golden pie that Mr. Xu Dishan brought back from India—simple to make and easy to prepare at home.
Ingredients
eggs (scrambled)

chopped onion (sautéed)
to taste
ground pork (70% lean, 30% fat)
to taste
curry powder
to taste
salt
a pinch
sugar
a pinch
MSG
a pinch
flour (for rolling dough)

Preparation
First scramble the eggs and set them aside. In a separate pan, sauté the chopped onion, add the curry powder, stir-fry until fragrant, and set aside.

Stir-Fry the Filling
Heat a pan and stir-fry the ground pork (or ground beef); once the meat changes color, add the chopped onion, scrambled eggs, salt, sugar, and MSG, and mix well.

Form the Pies
Roll out the flour dough into wrappers and enclose the stir-fried filling, shaping each into a rectangular pie.

Pan-Cook
Cook the pies on a griddle until golden and fully cooked through, brushing the surface with oil once or twice during cooking.
