Yam and Corn Pork Rib Soup

Ingredients

yam to taste
corn to taste
pork ribs to taste
scallion to taste
cilantro to taste
Thai chili to taste
salt to taste
white pepper powder to taste

Instructions

Step 1

Take the trimmed pieces from making spicy cumin pork ribs, wash off the blood, and prepare to make soup.

Place the pork ribs in a pot of cold water, add a splash of cooking wine, and turn on the heat.

Blanch for two rolling boils.

Remove and rinse off the scum and bone fragments.

Put the ribs in a clay pot and slice in a few pieces of ginger.

Add an appropriate amount of water.

Bring to a boil over high heat.

Simmer over medium heat for 40 minutes.

Cut the corn into small pieces. (Couldn't find sweet corn, so used local corn from home.)

Peel the yam and cut into small sections.

Add the corn and yam.

Continue to simmer for 10–15 minutes.

The finished soup is clear, not cloudy.

Cilantro, scallion, and Thai chili.

Season with salt and white pepper powder to taste.

Sprinkle with cilantro, chopped scallion, and Thai chili to serve.
