Yellow Chive and Shredded Kelp Soup
This Zhejiang soup is light, flavorful, and nutritious, made with shredded pork, yellow chives, and shredded kelp.
Ingredients
pork (shredded, marinated with salt and cornstarch slurry)

yellow chives (cut into segments)

kelp (shredded, blanched in boiling water)

soy sauce

broth (or substitute with canned chicken stock, chicken bouillon cubes, etc.)

Step 1
Cut the pork into thin strips, toss with salt and cornstarch slurry, and marinate. Cut the yellow chives into segments. Shred the kelp and blanch it briefly in boiling water.

Bring an appropriate amount of broth (or canned chicken stock, chicken bouillon cubes, etc.) to a rolling boil over high heat. Add the shredded kelp and cook briefly, then remove and place in a serving bowl. Scatter the pork strips into the pot and cook until just done. Add the yellow chives, white pepper, salt, soy sauce, and vinegar to season, then pour everything into the serving bowl.
