Yellow croaker (gutted, scored with willow-leaf cuts on both sides)

Pickled mustard greens (cut into segments and briefly blanched)

Soft tofu (cut into small flat squares)

Prep
Gut the yellow croaker and score both sides with willow-leaf cuts. Cut the scallion into small horseshoe-shaped pieces. Cut the pickled mustard greens into segments and blanch briefly. Cut the tofu into small flat squares.

Fry the fish
Heat oil in a pan, fry the yellow croaker until golden, and remove.

Braise
In another pot, combine the chicken broth, seasonings, tofu cubes, yellow croaker, and pickled mustard greens. Bring to a boil, reduce to gentle heat, and simmer for about 15 minutes. Add the white pepper before finishing, drizzle with sesame oil, add the cilantro, and serve.
