Zhua Chao Flounder Cubes

Ingredients

flounder meat 750g
cooked green peas 100g
fine salt 5g
Shaoxing wine 15g
egg yolk 20g
cornstarch 30g
soy sauce 10g
vinegar 10g
clear broth 150g
white sugar 20g
scallion 15g
ginger 15g
Sichuan peppercorns 10g
sesame oil 5g

Instructions

Step 1

Rinse the flounder meat thoroughly, cut into 0.8 cm thick large slices, score in a crosshatch pattern, then cut into 1.5 cm x 1.5 cm fish pieces. Marinate with fine salt and Shaoxing wine until flavorful. Place egg yolk in a bowl, mix with wet cornstarch to make a yolk batter, coat the fish pieces evenly with the batter, set aside.

In a separate bowl, combine soy sauce, vinegar, clear broth, fine salt, white sugar, and wet cornstarch to prepare a sauce, set aside.

Add peanut oil to the wok; heat over medium heat to 60% of full heat (150°C). Add the fish pieces and deep fry until cooked through and golden brown, then remove and drain excess oil.

Leave a small amount of oil in the wok, heat over high heat to 70% of full heat (approx. 175°C). Add scallion, ginger, garlic slices, and Sichuan peppercorn powder, stir-fry briefly. Add Shaoxing wine, then add the fish pieces, cooked green peas, and the prepared sauce. Stir-fry quickly, drizzle with sesame oil, then serve on a plate.
