8 White Cheese Brownies

8 White Cheese Brownies

Ingredients

egg (for the cheese filling) 1
white cheese 225 g
extra-fine sugar (for the cheese filling) 50 g
vanilla extract (for the cheese filling) 1 tsp
dark chocolate (at least 70% cocoa) 115 g
butter (for the brownie batter) 115 g
light brown sugar (light muscovado) 150 g
eggs (beaten, for the brownie batter) 2
plain flour 50 g

Prepare the oven and pan

Preheat the oven to 160°C (Fan 5). Line the base and sides of a 20 cm square cake pan with baking parchment.

Make the white cheese filling

Beat the egg in a bowl. Add the white cheese, extra-fine sugar, and vanilla extract. Stir until the mixture is smooth and creamy.

Make the brownie batter

Melt the chocolate and butter over a bain-marie. Remove from the heat, stir carefully, and add the sugar. Beat in the eggs one at a time, then stir in the flour.

Assemble and bake

Spread two-thirds of the brownie batter in the pan. Cover it with the white cheese filling, then pour over the remaining brownie batter. Create a swirl pattern with a toothpick. Bake for 30–35 minutes, until the center of the cake begins to set. Cool in the pan, then cut into small squares.
