Acacia Flower Doughnuts

Acacia flowers soaked in cognac, dipped in batter, deep-fried, and dusted with powdered sugar.

Acacia Flower Doughnuts

Ingredients

eggs 2
flour 250 g
beer 20 cl
oil 2 tbsp
cognac 5 tbsp
acacia flower skewers 30
caster sugar 50 g
powdered sugar to taste
salt a pinch

Instructions

Step 1

Separate the egg yolks from the egg whites; set the whites aside. Place the flour in a bowl, make a well in the center, and add the egg yolks, beer, oil, salt, and 2 tablespoons of cognac in that order. Stir with a spatula to form a fairly thick batter, adding a little water if needed. Cover with a cloth and let rest for 2 hours.

Step 2

Place the acacia flowers in a dish, drizzle with the remaining cognac, and sprinkle with the caster sugar. Marinate for 30 minutes.

Step 3

Before making the doughnuts, whip the egg whites to stiff peaks and fold them into the batter. Heat the frying oil. Pat the flower skewers dry, dip each one in the batter, and fry in the hot oil.

Place the fried doughnuts on paper towels to drain, and dust with powdered sugar before serving.
