Almond Silver Pork Lung Soup
A Sichuan soup with a milky white broth and a fresh, savory flavor.
Ingredients
whole pork lung (rinsed clean until completely white, cut into thick slices after stewing until tender)

sweet almonds (soaked until expanded, peeled, steamed until tender with added water)

scallions (lightly bruised)

Step 1
Rinse the pork lung lobes and trachea thoroughly with water until free of blood and completely white, drain off excess moisture. Blanch with boiling water mixed with cooking wine and bruised scallions and ginger, stew the lung until tender, remove and cut into thick slices.

Soak the almonds in boiling water until expanded, peel them, place in a separate container, add water, and steam over high heat until tender.

Pour the chicken broth into a pot, add the sliced pork lung and steamed almonds along with the almond cooking liquid, add the above seasonings, bring to a boil, skim off the foam, and serve.
