Alum-free Youtiao (Method 2)

Ingredients

flour 250 g
water (warm) 150 g
salt 5-6 g
baking powder (add more in cold weather) 5-6 g
egg 1
oil (for frying) to taste

Instructions

1

Kneading the dough

Dissolve the yeast, salt, and baking powder in the warm water. Add the flour and egg and mix into a dough (it should be soft and smooth), then cover with plastic wrap and let rest for 30 minutes.

2

Shaping and proofing

Knead the dough evenly into a log, and roll it into a sheet about 1 cm thick. Brush with oil, then place in a warm spot to proof until doubled in size.

3

Cutting the strips

Cut into strips about two fingers wide. Stack two strips on top of each other, press down the middle with a chopstick to seal them together, then hold both ends and stretch the dough.

4

Frying

Heat oil in a wok, then fry the dough sticks in the oil until golden.
