Step 1
After the butter is softened at room temperature, add sugar and salt, then beat with an electric mixer. Add the beaten egg liquid in two portions, stirring thoroughly each time until the egg liquid is fully and evenly combined with the butter.
Step 2
Cut the almonds and chocolate into small pieces separately; do not cut them too finely, and peanut-sized pieces are sufficient.
Step 3
Mix the low-gluten flour and baking soda together, then sift the mixture into the butter. Add the chopped almonds and dark chocolate pieces as well, stir with a rubber spatula to form a dough; stop mixing when there is no dry flour on the dough surface. Preheat the oven to 190°C, and line the baking tray with non-stick parchment paper or a non-stick baking mat.
Step 4
Scoop a small portion of dough with a spoon (you can also use your hands directly) and place it on the prepared baking tray. There is no need to shape it neatly; a rustic, rough look is fine, haha. Then gently press each portion flat with the back of the spoon. Note that leave a small gap between each cookie, as they will expand slightly after baking.
Step 5
Place the baking tray in the preheated oven, on the middle-upper rack, and bake for about 12 to 15 minutes.
