unsalted butter, softened 60g
granulated sugar 80g
salt a pinch
eggs 2
milk 120ml
lemon zest from 1 lemon
all-purpose flour 200g
baking powder 1 tsp

Prepare the batter base

Preheat your oven to 180°C (350°F). Line a 6-cup muffin tin with paper liners. In a large bowl, cream together the softened butter, sugar, and salt until light and fluffy, about 3 minutes with an electric mixer.

Add eggs and milk

In a separate bowl, whisk together the eggs and milk until well combined. Gradually pour this mixture into the creamed butter while mixing on low speed. Beat until the liquids are fully incorporated.

Incorporate lemon zest and dry ingredients

Fold in the lemon zest. Sift in the flour and baking powder, then gently fold until just combined. Do not overmix—a slightly lumpy batter is fine.

Bake until golden

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean. Let cool in the tin for 5 minutes before transferring to a wire rack.
