Instructions

1

Preparation and Marination

Wash the beef shank, trim off all the tendons, cut into 20 slices each weighing about 87.5 g, pound thin, sprinkle with salt and pepper, and coat evenly with flour.

2

Preparing the Side Ingredients

Wash the apples, peel, remove the seeds and stems, cut into small pieces and spread in the pan. Peel the onions and cut into long strips.

3

Pan-frying the Beef

Heat the soybean oil in a pan until hot, add the beef slices, and fry until both sides are golden brown, then remove and drain off the oil.

4

Arranging in the Baking Pan

Place a layer of apple chunks in the baking pan, arrange the fried beef slices on top, and sprinkle with more apple slices.

5

Braising to Completion

Peel and wash the onions, cut into strips, then sauté in butter until fragrant. Add the beef stock, season with salt, and pour over the arranged beef in the baking pan. Transfer to the oven and braise until the beef is tender, then sprinkle with roasted sesame seeds.
