Apple Chicken Curry

Ingredients

onion (peeled and chopped) 1
garlic (crushed) 1 clove
scallions (sliced thinly) 3
apple (sliced thinly) 1 medium
vegetable oil 1 tbsp
mild curry paste 1-2 tsp
soy sauce 1 tsp
coconut milk 2/3 cup (150 ml)
chicken stock cube (dissolved in 2/3 cup boiling water) 1
lemongrass 2 inch (5 cm) piece
chicken breast (diced) 2
frozen peas 3/4 cup (110 g)
salt and pepper to taste
cilantro, lime wedges, cooked jasmine rice (for garnish and serving) to taste

Step 1: Prepare the vegetables and fruit

Prepare the vegetables and fruit: peel and chop the onion, crush the garlic, thinly slice the scallions, and thinly slice the apple.

Step 2: Sauté the aromatics

Heat the oil in a wok or frying pan. Add the onion and stir-fry for 5-6 minutes until soft. Add the garlic and curry paste and stir-fry for 1 minute. Pour in the soy sauce, coconut milk, and chicken stock, stirring constantly.

Step 3: Simmer with the chicken

Add the lemongrass, chicken, and apple. Bring to a boil, then reduce to low heat and simmer for 6-8 minutes until the chicken is cooked through.

Step 4: Add peas and season

Add the peas and scallions and cook for another 1-2 minutes. Season with salt (be careful — the soy sauce is already salty) and pepper.

Step 5: Serve

Remove the lemongrass and spoon the curry onto plates. Sprinkle with cilantro and serve with lime wedges alongside the jasmine rice.
