Apple Stir-Fried Beef Slices
A Korean-style stir-fry of marinated beef slices and apple slices, featuring a soft pink hue, tender beef, and a light, fragrant apple aroma.

Prepare the apples
Wash the apples, remove the stems, peel, core, and slice into thin pieces. Soak in cold water to prevent browning.
Cut the scallions
Peel the scallions, wash, and cut into 3 cm segments.
Marinate the beef
Remove the sinew from the beef, wash, and slice into 4 cm long × 2 cm wide thin pieces. Place in a porcelain bowl, add 5 g of soy sauce, salt, sugar, MSG, and cooking wine, and mix well. Then add 75 ml of cold water in 3 batches, stirring in one direction until all the water is absorbed by the beef. Finally, add 5 g of cornstarch and the baking soda, and let rest for 2 hours.
Blanch the beef in oil
Heat a wok over high heat and add 500 g of soybean oil. When the oil reaches about 150 °C (roughly 50% hot), add the beef slices and separate them with chopsticks. Remove and drain, then pour the remaining oil into a storage container.
Stir-fry and finish
Leave a small amount of oil in the wok and heat it up. Add the scallion segments, and once fragrant, add soy sauce, sugar, baking soda, cooking wine, fine salt, MSG, sesame seeds, and a splash of chicken broth. Bring to a boil, thicken with a cornstarch slurry, add the apple slices, and toss to combine. Add the beef slices, stir-fry briefly, plate, and sprinkle the remaining roasted sesame seeds on top to serve.
