Stir-Fried Shrimp Balls with Water Chestnut
I’m a big fan of shrimp and cook with it regularly. After picking up some fresh water chestnuts, I decided to use them in a stir-fry with shrimp balls. The crisp, crunchy water chestnuts complement the savory, fresh shrimp balls perfectly: the pairing has a bright, subtle sweetness that’s flavorful without feeling heavy. I add extra vegetables to round out the dish’s nutritional profile and add bright, appetizing color too. It’s guaranteed to be a crowd-pleaser when served to guests during holiday gatherings.

Step 1
Wash the water chestnuts.
Step 2
Peel and cut into quartered pieces to pair with the shrimp balls.
Step 3
Slice half of each red and yellow bell pepper, cut okra into small sections and set aside.
Step 4
After deveining the shrimp meat, add black pepper, rice wine and 1g of salt, mix well by hand.
Step 5
Add a pinch of cornstarch and mix well, then add a small amount of oil and mix thoroughly. Adding oil prevents the shrimp from sticking together during stir-frying.
Step 6
Heat the pan, add cool oil, then stir-fry ginger and garlic until fragrant.
Step 7
Add the shrimp meat and stir-fry gently. Do not flip immediately after adding; wait until the shrimp slightly changes color and sets before flipping to prevent sticking to the pan.
Step 8
Once the shrimp is shaped and colored, remove it from the pan.
Step 9
Use the remaining oil in the pan to stir-fry the water chestnuts over medium heat for about 1 minute.
Step 10
Add the bell pepper and okra.
Step 11
Add salt and sugar to taste, then stir-fry for about 20 seconds.
Step 12
Pour in the stir-fried shrimp balls.
Step 13
Stir-fry for another 20 seconds, then serve.
