Enjoy the crisp texture of fresh asparagus combined with rich, creamy avocado in this vibrant salad, finished with a light and zesty white wine vinaigrette.

Ingredients

Green asparagus (peel woody ends, wash, and cut into segments) 2 stalks
Avocado (wash, remove pit, slice) 1
White wine vinegar 15 ml
Salt (excluding a small amount for blanching) 1 g
Black pepper powder 1 g
Olive oil 15 ml

Instructions

Step 1

Trim the tough skin from the base of the green asparagus and wash; wash the avocado, remove the pit, and slice.

Take a small bowl, add white wine vinegar, olive oil, salt, and black pepper, mix well to make the salad dressing.

Place a pot over heat, pour in an appropriate amount of water and bring to a boil. Add a little salt, put in the asparagus to blanch quickly, remove and soak in ice water or cold water to cool down, then remove, drain, and cut into segments.

Place the asparagus segments and avocado on a plate, drizzle with the salad dressing, and mix well.
