This refreshing side combines tender, aromatic peanuts with crisp vegetables for a light, crunchy texture. The subtle fragrance of star anise and Sichuan peppercorns infuses the peanuts, while a drizzle of sesame oil ties the flavors together, making it a perfect accompaniment for everyday meals.

Ingredients

Peanuts to taste
Carrot 1/3 piece
Cucumber 1/3 spoon
Light soy sauce to taste
Salt to taste
Sesame oil to taste
Bay leaf 2 pieces
Sichuan peppercorns 8 pieces
Star anise 1 piece
Chicken essence to taste

Instructions

Step 1

Rinse the peanuts, soak overnight, then add salt, star anise, Sichuan peppercorns, and bay leaves and simmer over low heat for forty minutes (I didn't soak, I made it directly in a pressure cooker)

Remove after cooking

Dice the cucumber and carrot (not too small; I cut mine too small and they were hard to pick up)

Add light soy sauce, sesame oil, and chicken essence and mix well
