Baby Pumpkin Baked Rice
Autumn pumpkins are especially sweet. This baked rice dish is made with a nutritious pumpkin, its flesh thick, tender, and naturally sweet, paired with stir-fried rice featuring chicken thigh and salmon for a rich, savory flavor. Baked until fragrant, the rice takes on the pumpkin's sweetness while the pumpkin absorbs the savory aroma of the rice. A feast for the eyes, palate, and nose—perfect for entertaining guests.

Instructions
Step 1
Prepare all the ingredients.
Step 2
Wash the baby pumpkin, then cut off the top about one-third of the way down.
Step 3
Use a spoon to scoop out the pumpkin flesh and set it aside.
Step 4
Dice the scooped-out pumpkin and set aside.
Step 5
Debone the chicken thighs and dice them (I bought pre-prepared chicken thighs; you can also use other cuts of meat if you prefer).
Step 6
Scramble the two eggs until cooked.
Step 7
In a separate pan, sauté the chopped onion until fragrant.
Step 8
Add the rice, salmon, and scrambled eggs, and stir-fry to break everything up.
Step 9
Add the chicken thigh and diced pumpkin, and continue stir-frying over medium-low heat.
Step 10
Finally, add seasonings to taste and the fried rice is done (add seasonings according to personal preference).
Step 11
Place a small handful of shredded cheese at the bottom of the hollowed baby pumpkin.
Step 12
Fill with the fried rice.
Step 13
Add another layer of shredded cheese on top. Preheat the oven to 200°C for 5 minutes.
Step 14
Cover with the pumpkin top and place the whole pumpkin in the oven at 180°C for 20 minutes on the lower rack. Note: oven strengths vary, please adjust the time and temperature according to your own oven.
Step 15
After 20 minutes, place a cheese slice on top, then add some more fried rice on top, and bake for another 10 minutes to finish (this step can be skipped if you find it troublesome).
Step 16
Beautiful and nutritious — will you like it?
Step 17
The finished product — remember to scoop out and eat the pumpkin flesh inside after baking!
