Bamboo Tube Chicken

Ingredients

Young rooster (slaughtered, plucked, and gutted) 1 (1500 g)
Sugar 30 g
Salt 10 g
Ham slices 100 g
MSG 3 g
Soaked winter mushrooms 50 g
White pepper 2 g
Soaked bamboo shoot slices 50 g
Scallion segments 20 g
Sweet soy sauce 50 g
Ginger slices 20 g
Salty soy sauce 50 g

Instructions

1

Marinating for flavor

Slaughter and clean the rooster, gut it, and rinse thoroughly. Combine the chicken, liver, gizzard, winter mushrooms, bamboo shoot slices, and ham, then add scallions, ginger, salt, MSG, white pepper, sugar, and the sweet and salty soy sauces. Marinate until the flavors are absorbed.

2

Roasting in the bamboo tube

Select a one-year-old green bamboo stalk about 50 cm long with a 12 cm outer diameter, keeping one end sealed with the natural node and leaving the other end open. Stuff the whole chicken—along with the liver, gizzard, winter mushrooms, bamboo shoot slices, and ham—back into the bamboo tube. Seal the open end tightly with a banana leaf and roast over a chestnut charcoal fire for about 2 hours, or until fully cooked. Remove the banana leaf and turn out onto a serving plate.
