cake flour 185g
fully ripe bananas 2
walnut kernels 50g
pumpkin seed kernels 40g
blackcurrant raisins 50g
white sugar 100g
baking powder 4g
yeast powder 1g
Salt 1g
Eggs 2
Butter 45g
Cocoa powder 10g
Milk 45ml
Dark chocolate 50g

Instructions

Step 1

Sift the cake flour, cocoa powder, salt, baking powder, and yeast powder, and set aside.

Prepare the ingredients: chop the walnuts; melt the butter at room temperature; place the overripe bananas in a plastic bag and mash into a puree using the back of a knife; beat the eggs with a whisk; soak the blackcurrant raisins in rum in advance.

After the butter has melted, add the white sugar and stir evenly until the sugar is completely melted and the mixture reaches a fluffy state.

Add the beaten egg to the butter in 2-3 batches. After the egg and butter are completely incorporated, add the milk and stir evenly.

Add the mashed bananas to the liquid mixture, then add the sifted dry ingredients and fold evenly using a spatula. Afterwards, add the walnuts, pumpkin seeds, and raisins, and mix evenly once again.

Chop the dark chocolate with a knife and add it to the batter.

Preheat the oven in advance. Grease the mold (6-inch) with butter to prevent sticking.

Bake for about 30 minutes. During the baking process, cover the mold with a layer of aluminum foil to prevent excessive browning. Demold after cooling, and brush the surface with a layer of syrup.
