Advance preparation
Pour high-gluten flour, sugar, and salt into a steel mixing bowl, mix thoroughly and set aside.
Dissolve yeast
Pour yeast powder into water and set aside.
Mixing
Pour high-gluten flour, salt, and sugar into the steel mixing bowl, mix by hand, make a well in the center, then pour in the egg.
Add yeast water
Add the yeast water all at once, then mix quickly to eliminate any powdery texture.
Kneading
Use both hands to fully knead the dough until the dough is no longer sticky to the touch.
Knead and press
Place the dough back into the steel mixing bowl, use your body weight to press down on the dough as you knead, until the dough develops a glossy surface.
Slap and fold
Slap the dough against the inside of the steel mixing bowl, fold the stretched and elongated dough in half, then repeat the slapping and folding process approximately 50 times.
First fermentation
Place the dough into a small steel bowl, then set the bowl in 30°C warm water for a water bath to heat, cover with plastic wrap and let it ferment until the dough expands to twice its original size.
