Basic Sponge Cake / Separated Egg Sponge Method
A fundamental sponge cake method that builds structure by heating and whipping the egg mixture. Includes three variations: butter sponge, hot milk sponge, and separated-egg sponge.

Preparation
Accurately weigh out the ingredients.
Warming the Eggs
Place the eggs, sugar, and salt in a stainless steel bowl. Immediately set the bowl over a hot water bath and whisk or beat until the mixture reaches about 110°F (43°C). This step helps the foam achieve greater volume.
Whipping the Eggs
Using a wire whisk or the whisk attachment of a stand mixer, beat the eggs on high speed until very light and thick. For large quantities, this may take 10 to 15 minutes.
Adding Liquids
If the recipe includes any liquids (water, milk, liquid flavoring), add them at this point. Following the recipe's instructions, drizzle them in a thin stream or fold them in gently.
Folding in the Flour
Fold in the sifted flour in three to four additions, taking care not to deflate the foam. Fold gently until all the flour is incorporated. If there are other dry ingredients (such as cornstarch or baking powder), sift them together with the flour first.
Panning and Baking
Immediately transfer the batter to the pan and bake. Delaying will cause loss of volume.
Variant: Butter Sponge
After folding in the flour in Step 5, gently fold in the melted butter. Incorporate the butter completely, but take care not to overmix or the cake will become tough.
Variant: Hot Milk and Butter Sponge
Heat the milk and butter together until the butter melts. Follow the basic method to whip the eggs and fold in the dry ingredients. Carefully fold in the hot milk-butter mixture in three additions.
Variant: Separated Egg Sponge
Use the yolks to make the base foam (Steps 2 and 3). Whip the egg whites with part of the sugar to stiff, moist peaks. Fold them into the batter alternately with the sifted dry ingredients.
