Bayberry Drink
A concentrated fruit juice made by simmering Chinese bayberries; mix with cooked honey before drinking.
Ingredients
bayberries
as needed
cooked honey (ratio per one jin of bayberry juice)
three jin
musk
a small amount
sugar (used when no honey is available; must first be boiled with water)
four jin

Extracting the Juice
Crush the berries and squeeze out the natural juice, then filter until completely clear.

Simmering
Place in an earthenware or stone vessel and simmer slowly over low heat until thickened, to the point where drops hold their shape when added to water. If not simmered enough, a white mold will form. Store in a clean vessel.

Seasoning
When using, for every one jin of bayberry juice add three jin of cooked honey and a small amount of musk. Serve either hot or cold as desired. If no honey is available, four jin of sugar boiled with water may be used instead.
