Step 1
Remove the stem end and seeds of the bitter melon, cut into thick slices, toss with salt and marinate briefly, blanch in boiling water, then drain and set aside.

Rinse the chicken breast, slice thinly, and toss with a little soy sauce, egg white, and cornstarch until evenly coated.
Step 3
Heat a wok over medium heat with a moderate amount of oil until warm. Add the chicken slices and stir-fry, separating them, until they turn white; remove and drain the oil. Leave a little oil in the wok, add the minced scallion and stir until fragrant, then add the bitter melon slices and stir-fry briefly. Add the soy sauce, sugar, chicken powder, and 2 tbsp of water. Thicken with the cornstarch slurry, return the chicken slices to the wok, toss to combine, and serve.
