Black Walnut Cookies
A sliced cookie with black walnut flavor.
Ingredients
butter (softened)
1 cup
packed brown sugar
2 cups
eggs

vanilla extract
1 teaspoon
all-purpose flour (presumably 3 1/2 cups)
13⁄2 cups
baking soda
1 teaspoon
salt
1⁄4 teaspoon
chopped black walnuts (divided)

Step 1
In a mixing bowl, cream the butter and brown sugar. Beat in the eggs and vanilla. Combine the flour, baking soda, and salt; gradually add to the creamed mixture. Stir in 1 1/4 cups of walnuts. Chop the remaining walnuts. Shape the dough into two 15-inch logs. Roll the logs in the chopped walnuts, pressing gently. Wrap each in plastic wrap.

Refrigerate for 2 hours or until firm. Unwrap and cut into 1/4-inch thick slices. Place 2 inches apart on a greased baking sheet. Bake at 350°F for 8-11 minutes. Cool on wire racks. Yield: 10 dozen.
