Blanched Enoki Mushrooms
Enoki mushrooms are blanched, then drizzled with a soy sauce dressing infused with hot oil, giving them a delicate, springy bite.
Ingredients
enoki mushrooms (root trimmed, washed)
1 handful
dipping soy sauce
2 tbsp
small dried red chili (chopped)

1 tsp
fine salt
1 tsp
scallions (chopped, white and green parts separated)

Blanch
Bring a pot of water to a rolling boil with 1 tsp fine salt, add enoki mushrooms and blanch for about 10 seconds, then remove and drain on a plate.

Season
Heat a small amount of oil in a pan, add the chopped dried red chili (with seeds) and fry until fragrant, then add the chopped scallion whites and stir-fry briefly. Pour in 2 tbsp dipping soy sauce to make a seasoning sauce, then immediately pour the hot sauce over the enoki mushrooms. Sprinkle with chopped scallion greens, and drizzle with a little sesame oil.
