Blondies
Classic golden blondies studded with walnuts and chocolate chips for a rich, satisfying bite.
Ingredients
all-purpose flour
150 g (5 oz)
baking powder
1/2 tsp
salt
a pinch
unsalted butter (cubed)
115 g (4 oz)
light brown sugar
200 g (7 oz)
egg

vanilla extract
1 tsp
coarsely chopped walnuts
115 g (4 oz)
dark chocolate chips
115 g (4 oz)

Preparation
Preheat the oven to 175°C (350°F / gas mark 4). Line the bottom and sides of a 20 cm (8 in) square pan with parchment paper.

Mix dry ingredients
Sift the flour, baking powder, and salt together into a bowl.

Melt butter and combine
Cut the butter into cubes and melt in a saucepan over low heat. Remove from heat and stir in the brown sugar.

Add egg and dry ingredients
Beat in the egg and vanilla extract, then fold in the flour mixture, walnuts, and chocolate chips.

Bake and cool
Spread the mixture into the pan and bake for 20–25 minutes until golden. Remove and cool in the pan. Lift out using the parchment paper and transfer to a cutting board.

Storage
Cut into squares and store in an airtight container for two to three days.
