Blanch the chicken
Bring a pot of water to a gentle boil. Add the chicken pieces and let them cook for 3 minutes without covering the pot. Remove and rinse clean to remove any impurities.
Start the broth
Place the cleaned chicken in a clay pot or large stockpot. Add the ginger slices, green onion, red dates, dried longan, and goji berries. Pour in the water and cooking wine.
Simmer slowly
