Story

This restorative soup has been a staple in Chinese households for generations. Black chicken has darker meat and richer flavor than regular chicken, making it ideal for slow-simmered soups.

Ingredients

black chicken (乌鸡) half a chicken, about 1.5 lbs
fresh ginger 3 slices
green onion 1 stalk
red dates 8-10 pitted
dried longan 8-10 pieces
goji berries a handful
cooking wine 1 tablespoon
salt to taste
water 8 cups

Instructions

Blanch the chicken

Bring a pot of water to a gentle boil. Add the chicken pieces and let them cook for 3 minutes without covering the pot. Remove and rinse clean to remove any impurities.

Start the broth

Place the cleaned chicken in a clay pot or large stockpot. Add the ginger slices, green onion, red dates, dried longan, and goji berries. Pour in the water and cooking wine.

Simmer slowly

Bring to a gentle boil, then reduce heat to low. Cover and let simmer for about 1.5 hours until the chicken is tender and the broth is rich.

Season and serve

Remove from heat. Season with salt to taste. Serve hot in bowls, accompanied by the tender chicken and flavorful broth.
