Mix the Dough
Place the bread flour, matcha powder, yeast, salt, milk powder, and sugar into the bowl of a stand mixer. Pour in the milk and mix on low speed until a rough dough forms.
Knead and Butter
Add the softened butter to the dough. Increase the mixer speed and knead until the butter is fully incorporated and the dough reaches the windowpane stage (smooth and elastic).
First Rise
Cover the dough with a damp cloth and let it ferment in a warm place until it has doubled in size.
Prepare the Filling
While the dough rises, melt the white chocolate and stir in the heavy cream until smooth. Let the mixture cool and thicken slightly for piping.
Shape and Fill
Punch down the risen dough and divide it into equal portions. Flatten each piece, pipe a dollop of the matcha cream filling into the center, and seal the edges tightly to form a ball.
Second Rise and Bake
Place the shaped buns on a baking tray, cover, and let them proof until puffy. Bake in a preheated oven at 180°C (356°F) for about 15-20 minutes until golden brown.
