Bourbon Balls

Bourbon Balls

Ingredients

vanilla wafers (coarsely crushed) 1 1/2 cups
chopped pecans 1 1/3 cups (about 5 1/2 ounces)
semisweet chocolate morsels 1/3 cup (2 ounces)
powdered sugar (divided) 1 1/4 cups
unsweetened cocoa powder (Dutch-process or American-style) 2 1/2 tablespoons
corn syrup (light or dark) 2 1/2 tablespoons
bourbon 1/3 cup

Mix Dry Ingredients

In a food processor, pulse the vanilla wafers, pecans, and chocolate morsels until finely ground. Add 3/4 cup of the powdered sugar and the cocoa powder, and process until evenly combined.

Mix Wet Ingredients

With the machine running, add the corn syrup and bourbon through the feed tube and process until fully combined. If needed, let the mixture stand 5 to 10 minutes to firm up slightly, or if the mixture is too dry, add up to 1 tablespoon of water and process until smoothly combined.

Shape

Using lightly oiled hands, roll the mixture into 1-inch balls. Place the remaining 1/2 cup of powdered sugar in a shallow bowl. Roll the balls in the powdered sugar until completely coated.

Meld Flavors

Store the cookies in an airtight container for at least overnight to let the flavors meld before serving.
