Bowl-Steamed Lamb

Slice fatty, tender lamb and place in a bowl. Add water, scallion, ginger, and salt. Cover the bowl's surface with damp paper and steam. Then add wine, vinegar, sauce, and ginger, and simmer gently until tender.

Ingredients

lamb (tender and fatty, sliced) per 500 g
water a little
chopped scallions a pinch
ginger 3 slices
salt a pinch
wine vinegar half a cup
sauce (dry) a pinch
minced ginger a pinch

Step 1

Take a coarse bowl, first add a little water, then place the meat inside along with a pinch of chopped scallions, 3 slices of ginger, and a pinch of salt; seal the mouth of the bowl with damp paper.

Set the bowl over a brisk flame and bring it to a boil a few times, then add half a cup of wine vinegar, a pinch of dried sauce, and a little minced ginger; reseal the bowl and continue cooking over a gentle, slow flame.

Wait until the lamb is tender, then serve.
