Brain-Calming Soup

Ingredients

white fungus (soaked, torn into pieces) 10 g
roasted eucommia bark (decocted to extract liquid) 10 g
rock sugar (boiled into a syrup) 50 g
lard (added at the end) a pinch

Instructions

Step 1

Place the white fungus in a bowl, add a suitable amount of warm water, and soak for 30 minutes. Then pick out any impurities and tough stems, rinse away the grit, and tear the fungus into small pieces.

Place the rock sugar in a pot, add water to dissolve it, and simmer until the liquid turns a pale yellow. Strain out any solids and set the syrup aside.

Place the roasted eucommia bark in a pot, add water, and decoct three times, collecting about 1000 g of the herbal liquid.

Step 4

Pour the herbal liquid into a pot, add the white fungus pieces and a suitable amount of plain water, and bring to a boil over high heat. Reduce to a gentle simmer and cook for 3 to 4 hours until the white fungus becomes very soft. Stir in the prepared rock sugar syrup. Just before serving, add a small amount of lard so the soup becomes richer and more silky.
