Braised and Stir-fried Lion's Mane Mushroom

Ingredients

Cultivated lion's mane mushroom (soak in warm water, wash, drain) 2 (about 200 g each)
Lean beef (cut into strips, season with salt and pepper and marinate) 150 g
Chili paste 25 g
Rendered chicken fat 50 g
Onion (peeled, cut into strips) 100 g
Vinegar 25 g
Peanut oil 100 g
Diced cooked ham 15 g
Scallion (cut into chunks) 15 g
Salt 5 g
Ginger (cut into chunks) 10 g
Cooking wine 15 g
MSG 3 g
Ground pepper 2 g
Chicken broth 150 ml
Cooked peas 25 g
Sesame oil 10 g

Instructions

Soak lion's mane mushrooms

Soak the cultivated lion's mane mushrooms in warm water, wash thoroughly, drain.

Marinate whole lion's mane mushroom

Take another whole lion's mane mushroom, marinate it whole with salt, cooking wine, and MSG until flavorful.

Prepare ingredients

Slice the remaining lion's mane mushroom; cut the lean beef into strips, sprinkle with salt and ground pepper, and marinate briefly; peel the onion and cut into strips.

Braise whole lion's mane mushroom

Heat a wok, add oil, and heat to medium temperature. Add the scallion and ginger chunks and stir-fry until fragrant, then add chicken broth and bring to a boil. Add the marinated whole lion's mane mushroom, then add a pinch of salt, cooking wine, and MSG in sequence. Braise until the mushroom is flavorful, thicken the sauce with water starch, add sesame oil, then transfer to a large round plate. Top with diced cooked ham and cooked peas.

Stir-fry sliced lion's mane mushroom

Wipe the wok clean and heat it, add peanut oil and heat to medium temperature. Add the onion strips and stir-fry until fragrant, then add the beef strips. When the beef is 80% cooked, add chili paste, vinegar, and sliced lion's mane mushroom, stir-fry evenly, then transfer and arrange around the large round plate. Serve.
