Cupid’s Chocolate Cake

Ingredients

butter (softened) 1 cup
sugar 2-1/2 cups
eggs 4
vanilla extract (divided) 2-1/2 teaspoons
all-purpose flour 2-3/4 cups
baking cocoa 1 cup
baking soda 2 teaspoons
baking powder 1/2 teaspoon
salt 1/2 teaspoon
water 2 cups
heavy whipping cream 1 cup
confectioners’ sugar 1/4 cup
buttercream frosting (of your choice) 4 cups

Make the cake batter

In a large mixing bowl, cream the butter and sugar. Add the eggs one at a time, beating well after each addition. Beat on high speed until light and fluffy. Stir in 1-1/2 teaspoons of vanilla extract. Mix the dry ingredients; add them to the creamed mixture alternately with the water.

Bake

Pour the batter into three greased and floured 9-inch round cake pans. Bake at 350°F for 25-30 minutes, until a toothpick inserted into the center comes out clean. Cool for 10 minutes, then remove from the pans and place on wire racks to cool completely.

Make the cream filling

For the filling, in a large mixing bowl, whip the heavy cream to stiff peaks. Fold in the confectioners' sugar and the remaining vanilla extract.

Assemble and decorate

Place the bottom cake layer on a serving plate; spread half of the filling on top. Repeat the layers. Place the top cake layer on; frost the top and sides of the cake with the buttercream frosting. Chill.
