Braised Beef Cubes with Peaches and Pears

Ingredients

Beef shank (washed and cut into cubes) 750 g
Peaches (about 400g, peeled, cored and halved) 3
Pears (about 400g, peeled, cored and halved) 3
Raisins (washed) 50 g
Potatoes (washed, peeled and cut into chunks) 120 g
Onion (washed and finely chopped) 100 g
Tomatoes (washed and diced) 250 g
Cooking oil 100 g
Salt to taste
Ground pepper to taste
Beef broth to taste

Instructions

1

Ingredient Preparation

Wash the beef and cut it into cubes; peel, core and halve the peaches and pears; wash and dice the tomatoes; wash, peel and cut the potatoes into chunks; wash and finely chop the onion; wash the raisins; set everything aside.

2

Braising

Heat a pan and add the cooking oil. When the oil is moderately hot, add the chopped onion and sauté until lightly golden. Add the beef cubes and sear until browned on all sides. Add the diced tomatoes and stir-fry briefly, then pour in enough beef broth to partially cover the meat (do not add too much). Bring to a boil over high heat, then reduce to a gentle simmer and braise for 1 hour. Add the peaches, pears and potatoes and continue braising until tender. Season with salt, ground pepper and the raisins to taste.

3

Plating

When serving, arrange the beef cubes on a plate and place the peaches and pears alongside.
